Delicious watercress soup

Delicious watercress soup

This smooth soup is a beautiful green color with the clean, peppery taste of watercress.

Ingredients:

  • 2 bunches of watercress, washed and tough stalks cut off
  • 1 large Spanish onion
  • 1 tablespoon olive oil
  • 1 1/2 pints vegetable stock (you may wish to use veg stock cubes)
  • salt and pepper to taste

Method:

Fry the onion in the olive oil until it becomes transparent, add the chopped watercress, and stir for 1 minute.

Now add the stock and bring to the boil. Then Liquidise (preferably with a hand-held blender), season to taste, and serve while it’s hot.

Add a swirl of cream if you like, it just gives it that extra WOW factor!
