coq-au-vinThe other day i was asked to prepare a coq au vin for a dinner party, great dish , full of body ideal for a dinner party. I use chicken breasts, red wine, button mushrooms. As for  the onions i use a jar of small cocktail onions, washed to remove any vinegar , these really are ideal, save peeling shallots!! Just a handy tip. A simple dish, great for the slow cooker.

Next i add a couple of bay leaves, mixed herbs and garlic.You may wish to add a couple of tins of red wine sauce , but a good bottle of red wine will be better.A drop of brandy can also be added .I just let it cook on high for about 6 hours, or until the meat is tender. A truly great dish to try at home.
